The broth is combined with fresh homemade noodles enhanced with kansui for a springy texture, and it’s topped with marinated and torched pork belly chashu, a seasoned ajitama egg, bamboo shoots, scallions, and nori. This indulgent bowl balances savory, fatty, and umami flavors, delivering a comforting and satisfying experience.

    ZAO is one of, if not THE best ramen place in the DMV area. I lived in Japan for four years, and I even prefer it to some places I frequented there because not only do the owners have a true passion and skill for making ramen, but they have a unique creativity that is unlike anywhere else.
