Kjøttkaker are traditional Norwegian meatballs, or "meat cakes," which co-owner/chef Tom Stendal describes as one notch above IKEA's Swedish meatballs. The seasoned ground beef mixture is blended, formed by hand into medium-small shapes resembling an American football or an egg, and baked in the oven. They're then drowned in a brown gravy made with browned butter and caramelized Norwegian goat cheese, and served with boiled potatoes, mushy peas, and lingonberries.

Norwegian kjøttkaker — meat cakes in brown gravy — are the signature dish at Café Sophie, a Scandinavian café inside the terminal at Montgomery County Airpark in Gaithersburg, MD. Co-owner Tom shows Seth Tillman the spices, the browned-butter gravy with Norwegian brown cheese, and the lingonberries that finish the plate.

Everything was made really well... The smells from both stews were amazing... And what a setting — on an airfield!
