A cafe adaptation of awaze tibs, a popular Ethiopian dish traditionally eaten with injera, here served as a panini on ciabatta bread chosen specifically because it soaks in the juices while crisping on the outside. The tibs is made from beef seared in a hot pan and finished with awaze — a paste built from berbere spice blend — and kibbeh, a clarified butter seasoned with Ethiopian herbs. It is layered with house-made ayib, an Ethiopian fresh cheese, and pressed on a panini press, then plated with a small side salad and homemade vinaigrette.
